BURNT ENDS using lean Rolled Pork Legs from Costco

Make sweet lean Pork Burnt Ends with 2 Pork Leg Rolls from Costco ($6/kg)

– Sit on tray, rind side down, and heavily inject with Woollies ‘Multivitamin Juice with 10 Fruits’ and MOIST MEAT BOMB.

– Cover meat side in FAJITA SEASONING (Garlic Butter Rub) and SWEETnSMOKEY CAJUN Rub

– Place in Smoker, Rind side down, cook at 120C for about 7hrs to 74C internal.

– Wrap single ply in OREN PINK BUTCHER PAPER.

– Smoke at 135C for about 2hrs till 90C internal Temp.

– Take out of Smoker and let cool 30 mins in the Butcher Paper.

– Put COTTON INNER GLOVES on under XL BLACK NITRILE GLOVES for hot meat handling.

– Unwrap the hot meat, scrape the rind fat off the meat, slice into thick slices, then into neat squares, snack on the offcuts.

– Put squares into a large Costco tinfoil tray, pour Classic sugar Coke over all squares to wet them.

– Make up a jug of sweet sauce: use some of our 3ltr SMOKY HICKORY BBQ SAUCE, Costco 1ltr Yoshida Spicy Wing & Rib Sauce, Dark Brown Sugar, Chinese 5 Spice powder. Microwave a few mins and stir together.

– Cover the Pork squares with the sweet sauce and Smoke uncovered for 2hrs at 150C.

– Serve on boiled rice, or wrapped in fried Paratha bread that was bought from Indian Grocery Store in a frozen 30 pack.
